Is there an adapter that can be attached to an iPhone or iPod and allows remote control of the device? This is mainly for starting/stopping music. The adapter would need a small remote control. Something with just a play button would work.

No - I need this to be a stand alone remote adapter. The iPhone headphone jack will be connected to my home intercom system. I just need a way to remote turn on/off music.
I'd likely any remote adapter will also need the headphone jack. In that case, I'll try a Y adapter.

Yes, but using a BT audio device disconnects the audio output at the headset jack which he wants to connect to the intercom. A Y-adaptor won't help, He would need a BT connected intercom with controls near his location - not likely to find one.
Perhaps I misunderstood modular's suggestion but I know that one of my headsets, a BlueAnt Q3, has a button that will activate Siri. In theory, you could use it as a remote to turn off the music.
BT headsets/speakers can control the audio - on, pause, skip, volume, etc

I know I can select which device to play music through but perhaps I was thinking multiple BT options.
Didn't the Airport Express have some ability to connect to stereos so you could stream music from another device? It's been a while but I wonder if something like that would work.
They can control only BT connected audio, not connected to the headset jack.
