For the avoidance of any doubt, I suggest that you check directly with Apple before making a purchase:
Perhaps non are unsafe but to err on the safe side buy an Apple watch with a metal or leather strap.
All Apple Watch bands are to be considered hypoallergenic. Apple runs thousands of tests on the band materials. See the "Wearing Apple Watch" page for more information.
Neither that support article nor the linked Apple document (Restricted Chemicals for Wearables) states expressly whether or not the Sport Bands (and/or any others) include any latex.
The linked document does include latex among the listed materials. It also, for example, lists nickel. Whilst the nickel content is very low, some watch and band materials do still contain some nickel.
