Q: Disk Utility Security Options Not Present - OS X 10.11.4

I am formatting my old Windows hard drives and I wanted to use the 7-Pass secure erase found here.  OS X: About Disk Utility's erase free space feature - Apple Support  I have 'erased' 4 drives tonight, but several things make me uncertain that this is functioning the way I want it to.

  1. I cannot find anywhere to specify the security options - 1-Pass, 3-Pass, 7-Pass, etc.  I have done this in the past and there was a place to specify the method, in an advanced tab if my memory serves me correctly.  I see no such option now.  (see attached image)
  2. The process to erase is nearly instant.  As soon as the platters begin to spin, DU says it's finished and the spinning stops.

 

I have looked through each of the app menus and cannot find any possibilities there.

 

Is there a way to ensure that I am erasing these drives, preferably with a 3 or 7-Pass method?  ...or has this been simplified or removed from Disk Utility?

    If I remember correctly one of the senior posters (I believe it was OGELTHORPE) commented that the erase process that you are using should be enough for the most part unless you have nuclear secrets on there in which case I believe the recommendation was to take a hammer to the disk.
