Sorry to hear that you are having issue with iTunes and not staying open for you. Let's go over some general troubleshooting to get it sorted out.
The first thing try is starting up iTunes in Safe Mode. You can do that by holding the Shift + Control keys held down while launching iTunes. This will help determine if any third party plugins might be causing issues.
