You can try these steps:
1. Try to sync your iPhone iMessage to Mac Messages
2. Choose your chat session, and then choose Edit > Select All
3. Choose Copy
And you can paste your iMessage transcripts to text editor or office editor.

I use PhoneView. It cost me about $30 but, as I like to keep my messages from people I care about archived, it's been well worth it. You can save to a PDF or text files.

iMessages will only "sync" from the moment both the iPhone and Mac are using the same Apple ID (I.e. when you add the ID to the iPhone and then accept the pop ups on the Mac).
The servers will only deliver iMessages to registered devices.
The Sync is only "Display on all Devices" and nothing more.
There are Utilities that can extract files from the iTunes backup of the iPhone.
I have not tried one and cannot speak to their effectiveness myself.
Meg St_Clair seems to have another method I had not heard of.
Basically once the devices have the iMessages they store them in different file formats.
It is impossible to get one app on one device to "read" saved files of the other.
The whole Chat could be selected on the iPhone and sent as one text/iMessage (or in sections) to the Mac but no formatting would be saved.
Another option would be to take Screen Shots of bit by bit of the chat and send them to the Mac.
They would be less searchable but the chat would "appear" formatted.

I didn't find PhoneView in the App Store. If I could impose upon your good nature, are there other places I should be looking? This is an urgent need.
Imagine trying to preserve the only copy of a life experience rarely visited on two people whose relationship began in 1963. A thread of conversation reignit in September 2015 and spanning eight months. Two young, almost lovers separated by fifty two years... I wax philosophic... I apologise...
The 'PhoneView' app appeared to be spot on. Any insights appreciated.

I apologize for not being clearer. It's not an iPhone app, it's a Mac application. I don't know if it's available through the App Store on your Mac or not. The developer is Ecamm. Put "PhoneView" into Google and it's the first hit.

Ecamm did many a good Add on for iChat back in the day. I see they still do iGlasses.
iGlasses added USB Camera support to iChat 2 and 3 originally and well as some tweaks to the visuals if you wanted.
Originally iChat could only use the External iSight that was Firewire.
It now seems to be a variant on Apple's own Video Effects but I can't work out if they are available in all apps that can use the camera.
