Open an IMG File, change date on the menu, re-make the img file

I made a IMG File in DVD Studio Pro that has 2 menus back in December. It turns out I was given the wrong date and I put that date on the menu.

I still have the IMG file. Is there a way to get to the original menu and change the Date then re-make the img file again with the new date?
