If i sync photos from iTunes, I can't delete or edit those photos and videos on my iPhone. Why? Are there some other methods that will allow me to edit or delete photos on my iPhone?

you delete them by unsyncing them from your phone using iTunes.

WiFi transfer app is another option. Check in the iTunes store for this kind of app.
Beware, beware of the iCloud Photo Library. Be sure you fully understand what it is and how it works before enabling it, else risk losing your valuable pics.
