I Have the Apple Cinema 23 aluminum which is still in great condition (almost like new), however I'm not sure if the interface (type, color and sharpness) would do well if I install El Captain. I have a MP 2010 with a Nvidia GTX 760.
Currently Im running Mavericks and Yosemite. I Also have heard that El Captain is build more towards retina display.
El Capitan is working fine on my Apple 22" Cinema Display, which is even older than your display. El Capitan may have better retina display support, but won't be any worse on a non-retina display than earlier versions of OS X.
Non-retina displays are not a problem unless you are foolish enough to try a retina display.
