My son got an iPad Mini for Christmas a few years ago, then got an iPad Air for his birthday and gave me his iPad Mini, and when I updated to iOS 9.3 it asked me to Activate the iPad using the Apple ID that was first used to set it up, my son does not remember what that Apple ID was, how would I go about fixing this?

Typically an Apple ID is your current email address. Does your son not know his email address or he did change it since he set up th iPad? If he didn't change it, the Apple ID is the same, but he may need to reset the password.
He can go here and try to recover the ID and/or the password.
Also when you are asked to enter the original Apple ID you are presented with a hint. At least the first letter of the Apple ID will be shown. Hopefully that will help your son "remember" the Apple ID (email address) used to set up the iPad.
