Apple MusicOpen the Watch app on your iPhone then tap the My Watch tab then tap General then Language & Region then tap the System Language section and select your desired Language.
If that doesn't help, restart your Apple Watch > Restart your Apple Watch

On your Apple Watch, after tapping on Reply, press firmly on the screen, then tap on Choose Language to select a different language for your reply (including for replies when using dictation).

Apr 27, 2016 11:43 PM in response to Nelly_gabrielby Jonathan UK,The default language for any given conversation in Messages is set to the same language as the active keyboard on your iPhone (in Messages) for that particular conversation. When you change the keyboard language for that conversation on your iPhone, it also changes on your Apple Watch.
To change the language for any given conversation on your iPhone (and therefore also on your watch):
- Lock your iPhone (press the Sleep / Wake button briefly).
- Open the conversation with that contact on your watch and tap on Reply.
- On your iPhone, press the Sleep / Wake button briefly to display the Lock screen.
- Towards the lower left corner of the Lock screen, swipe up on the Messages icon (where Handoff icons appear).
- This will open that conversation in Messages on your iPhone.
- Tap the globe symbol by the space bar on the iPhone keyboard and choose your preferred keyboard language.
- To add more international keyboards (if required), on your iPhone first go to: Settings > General > Keyboard > Keyboards > Add New Keyboard.
- Start typing a reply on your iPhone (one or more characters), then delete it (this sets the keyboard language choice for that conversation).
- On your watch, in the Messages app, Cancel out of the reply screen.
- Start a new reply in that conversation - the new language will now be used automatically for dictation and short replies within that conversation.

This is incorrect.
This instead changes the language used across all system services on your watch.
The steps in my previous replies will enable you to choose different languages for use within Messages conversations on your watch (and iPhone).
