Thanks for using the Apple Support Communities.
I see you have downloaded an audiobook from outside the iTunes Store, and you'd like to sync it to your iPhone but you're worried that Apple Music will interfere with it. First of all you will need to import this audiobook into iTunes.
Add items from your computer to your iTunes library
Do either of the following:

Drag a file or folder from the Finder to the iTunes window.
If you add a folder, all the files it contains are added to your library.

In iTunes, choose File > Add to Library, locate a file or folder, and click Open.
iTunes 12 for Mac: Import music and video already on your computer
Once you have imported the file, if the filetype hasn't already been set to an audiobook, then you will need to make that change. Otherwise it will be treated as if it is a music MP3 file. To move the file you've imported into the audiobooks section please follow through the steps below.
- Select your imported audiobook
- Go to File > Get Info
- In the window that appears go to the Options tab
- Change Media Type to Audiobook
Now your imported audiobook should appear in the Audiobooks section of iTunes, which you can then sync to your iPhone.
