Q: What is supposed to be the EFI-versions, for modern (post-2014), Macs ?

I see you're concerned about the current firmware version for your MacBook Pro.  The support article you referenced is up to date.  The EFI and firmware versions in the link are accurate, as your MacBook Pro that you purchased is still covered as the Mid 2014 in the list.
