iPad mini, fully charged, has shutdown overnight the last 2 nights. Alarm doesn't go off. No settings have been changed and it has worked fine to date. Only way to restart is to plug it into the charger. Help!

Is the battery running down all the way overnight? That's the way it makes it sound when you say the only way to get it to start is to plug it in to charge again. Have you tried closing all of the apps at night and see if it still shuts off, if that is what it is actually doing? An app might be causing the problem.
It is still almost fully charged in the am. I plug in, it goes on and shows that is still 75 or 80% charged as it was the night before.
OK. So what you are describing is the iPad actually shuts off at night and you can not restart it by using the power button. Is that correct? If that is the case, try closing all of the apps at night as a test.

IF it is OK in the morning after closing all apps, you will have to try to track down the problematic app, assuming that is the problem.
