How do you export the wiki library to a zim file that's viewable offline using Kiwix?

I've turned on the wiki server on my OS X server. I love it. It's great, but i want to export the wiki so it's viewable offline. I don't always have internet, and I need a static copy I can update periodically. How should I do this?
