I unkownly restore my iPhone not realizing it wouldn erase all of my current data photos ect

There is no practical way to recover data from a restored device.
If you have a backup you can restore from backup. The backup dose not included seemed media like photos synced to the device. The backup does included photos in the devices Camera Roll album
To restore from backup see:

If you restore from iCloud backup the apps will be automatically downloaded. If you restore from iTunes backup the apps and music have to be in the iTunes library since synced media like apps and music are not included in the backup of the iOS device that iTunes makes.
