Is there anyway to create an app just for yourself without publishing it on iTunes? I have a few apps that I would like to create, but I have no interest on selling them - I just want to create these utilities for me.

Yes, you can. Use Xcode to create the app, and it can generate a .ipa file for you which you can sync to your device using iTunes.
