Hi I'm planning on buying an Iphone SE upgrading from my initial Iphone 5 phone which is currently on ios 7.1.2. My question is, would I be able to backup my current phone and restore it's content into the Iphone SE with no issue? would it be a problem seeing as it's a newer firmware. I don't want to lose all my contacts and messages as it's important for work.

It's fine. You can restore from an old OS to a newer one, but not the other way round.
so it would workout with no issue? because last year I attempted this with an iphone 5s device running ios 8.1 and it would not restore the full content onto the phone
To be sure, go to Settings > iCloud > and make sure Contacts are turned to ON. Then go to iCloud.com on a browser (any browser, a computer or iOS), log on and verify that they are there. If so you should not lose them regardless.
I see the options to enable but there isn't anything about messages
Messages are included as part of iTunes backups. See here.

However, as you know with any technology, glitches can occur, maybe infrequent but nonetheless, always a small risk.
