someone had acess to my iPhone for a few days and it was unlocked. Since I have had it back it has been acting strange. Is there anyway to tell what they did or to be sure nothing is now on my phone that i dont want?

Any apps you did not install? If you have a recent backup, erase the phone and restore from backup.
And put a passcode on your phone.
You can double tap home button to see recent activity in the form of recently used apps

Unless someone removed apps from the recents tray.
