why cant i access data on my iphone in itunes

I have downloaded films to my iPhone 6s but can only play on my iPhone and they do not show in iTunes only as data and documents this is rubbish and having owned 6 iPhone this is the late one I will ever buy seems the powers that be at apple want to control everything in life
