It is not presently possible to turn off the screenshot feature on Apple Watch.

Apr 30, 2016 2:38 AM in response to David2580by Jonathan UK,If you find that screenshots are being taken accidentally (for example, by the buttons being pressed by the back of your hand when flexing at the wrist or by your clothing catching on the buttons), the following steps may help to prevent this from occurring:
- Wear your watch a little higher on your wrist.
- Wear your watch band more tightly (exercise may otherwise cause it to move it from the usual position).
- Wear your watch on your other wrist or on the same wrist, but rotated by 180 degrees, so that the Digital Crown and side button are on the other side, where they may be less likely to be activated unintentionally.
- To adjust the display settings, on your iPhone in the Watch app, go to: My Watch > General > Watch Orientation - change the side for the Digital Crown.
