ibooks - How do you change the country of purchase?

When trying to buy an ibook, it reverts to Australia as the country to purchase (incl. currency) and deliver to. How do I change this to the UK?

Change your iTunes Store country or region

When you make a purchase in the iTunes Store, App Store, iBooks Store, or Mac App Store, the country in your iTunes Store account information must match the country listed on your Apple ID account page.
