I have recently purchased a iPhone from a applestore from united kingdom. Is the phone unlocked to all networks? I was told that once you put your first sim in the iPhone it gets locked to that sim. is this true? Can i pop in any uk sim without having to pay to unlock to all the networks.

If you bought an unlocked phone from an Apple store, it will not be locked to the first carrier to which you activated it. However, that's not true of SIM-free phones (not the same as unlocked) from some carriers. In the UK, SIM-free iPhones purchased from Carphone Warehouse, will, in fact lock to the first carrier on which you activate them.
Any unlocked iPhone will remain unlocked. The concept has to do with whether or not a particular carrier is subsidizing your purchase and holding you to a contract with them. When you buy from the Apple store as an unlocked or "SIM Free" device, you are free to use the device on any network and can change networks when you'd like.
