Q: How and where do I ask questions about Email?

The opening board thingy is complicated, I'm having difficulty finding my way around it.  I'm not sure where or how to pose questions about email.  Is there an easier way than trawling through all those icons?  Like a list or something - like you get on all other forums on the internet?

Mac mini, OS X El Capitan (10.11.4)

This would be a good starting place: Mac mini

Or the appropriate section under MAC Os and System software.

Rule of thumb I use, if it is about an *app* included with OS X software installation (a few exceptions* - but Mail is not one), post in the forum for that OS X version - OS X El Capitan in this case = if it regards some element of the hardware, choose that device's forum as   suggests.

I, for one, cannot figure out your posts; would it be possible - please - to use proper sentence structure, formatting, punctuation, and paragraphs. Also, if you are referring to an Apple article and/or link to it, please do so.

This is an example of a linked article (from your post) - it's a live link:

I have had 2 emails recently thanking me for orders from the app store - one for Netflix, and the latest (today) for tom-tom UK and Ireland. I do not even have a sat nav and did not order either. I do not want to follow the link to cancel as I am sure they are fishing but how do these get through? Do I have a problem and need to dance my card which is linked to my Apple store account?

It is a phishing attempt. Do not respond. Do not divulge any personal or financial information. You can use the address below to forward the suspect email message, as an attachment to Apple.
