You either do not have a PowerMac G5 if it is running 10.6.8 or your PowerMac G5 is not running 10.6.8. The PowerMac G5 is not capable of running Snow Leopard 10.6.8. It is only capable of running OS X Leopard 10.5.8.

People commonly mix up the PowerMac G5 and the Mac Pro, and I think you may have done so.This may help. How many optical drive doors does yours have?:
The PowerMac G5 (discontinued in early 2006) can run no higher OS than 10.5.8. The Mac Pro can run OS 10.6 but internally is hugely different from the G5. If you have a Mac Pro we can get you moved to that forum before someone takes your post at face value and gives you inappropriate advice.

so what add-on cards are inside and what external drives do you have attached?
are you using any Bus-powered drives?
No add-on cards, and one USB external drive, not Bus-powered (has a power cord)
2nd internal drive for Time Machine...
All Energy Saver, Sleep settings turned to "never," but most mornings when I come in monitor is black and keyboard is non-responsive. I think the CPU is still running, but the monitor doesn't respond. Have to do hard shut-down with on/off button/reboot.

You may have simply had the Screensaver (not to be confused with Display Sleep) kick in. Its settings (including onset time) are in:
System Preferences > ScreenSaver
Once the screen has gone dark, you can sometimes get into a diabolical race condition with logic in the screensaver-equivalent built into the display. Both the Mac and the display say, "after you", no "after you" and nothing gets resolved.
getting screens to light up:
the Mac will light up a screen when it has sent a query to it to ask, "what is your name, and what are your capabilities", and the display has responded with reasonable values. This query is sent:
• at startup
• when using Option- (Detect Displays) in the Displays system preferences box
• when the Mac-end of the display cable is inserted
• on wake from sleep (which, requires a sleep so that you can wake from sleep)
The display must be paying attention to receive the query and respond. Displays with multiple Inputs can be troublesome, because they may be watching the "TV" input rather than the "computer" input.
