I'm guessing it's a second gen (it has bluetooth and voice memo) and I cannot seem to get any voice input. Anyone have a similar experience? I think it should have an internal mic and I've also tried a bluetooth headset with mic. When I open voice memo and hit record, it says something about no microphone connected.

You should properly identify your iPod model? There are several iPods with bluetooth and voice memo functions, including iPod touch and iPod nano. This document shows all the iPod models.

If it's an iPod touch, what version of iOS does it run?
It's an iPod touch. Is the version the iOS? If so, it is 4.2.1. Model is MD528LL.

It does not have a built-in microphone. I don't think a microphone from a Bluetooth headset is supported, since this is not a phone. You can use the microphone on wired headphones (on the cord), including the current "EarPods" (according to Compatibility info in the item description)

The 4G iPod was the first to have an internal mic. The 4G was also first to have cameras. You need to get an external mic like the ones that come with headphones with mic and remote. The headphone jack includes a contact for a mic.

Here's the older user guide for iPod touch (with iOS 5.1). I believe that's one generation newer than your iPod touch. Didn't see an older user guide currently listed, but Apple made user documentation available online back when your old iPod was new.

I tried one that looks exactly like the one pictured most often. It has three black stripes on the jack. It's very frustrating that the bluetooth does not work but I guess it just doesn't allow input - it just seems strange to do so. I guess I'll just go down to some stores and see if I can find one that works.

Yes the Bluetooth on the 2G does not support the profile (hands free) needed for headsets. See:

I can't really say which mics I tried. They were just old mics with the right looking jack. I'll just bring my iPod with me when I go to the store. Thank you, LLLaass.
