Servers EnterpriseYou can either modify postfix parameters inside:
/Library/Server/Mail/Config/postfix/main.cf
(See http://www.postfix.org/postconf.5.html for details)
or you can use serveradmin from the command line to set the same parameters.
For example:
sudo serveradmin settings mail:postfix:relayhost
will show you your relayhost, while:
sudo serveradmin settings mail:postfix:relayhost = "my.relayhost.tld"
will set your relayhost.
Related parameters are:
mail:postfix:smtp_auth_relay_dict:smtp_auth_relay_host = "relayhost" mail:postfix:smtp_auth_relay_dict:smtp_auth_relay_pwd = "relayuserpassword" mail:postfix:smtp_auth_relay_dict:smtp_auth_relay_userid = "relayuser" mail:postfix:relayhost_enabled = yes mail:postfix:relayhost = "relayhost"

Servers EnterpriseIf your relay server only accepts plaintext authentication, the smtp_sasl_security_options parameter in /Library/Server/Mail/Config/postfix/main.cf must be added to overwrite the default value.
To allow plaintext passwords in unencrypted SMTP sessions following line must be added:
smtp_sasl_security_options = noanonymous
