I was wondering if it was possible to have a PDF, or similar document, appear as on object on the main iPhone desktop?
That way I can have quick access to it instead of having to search for it if I wanted to view it

No. The "desktop" called the home screen, can only contain Apps, and bookmarks to websites.
It cannot hold files or shortcuts to files.
Some File Management Apps may let you set certain files as favorites for quicker access within the app. But that will depend on the App.

My suggestion...
Keep PDFs in the iBooks app. For quick access you can create a Favorites collection.
