I texted my mom & husband yesterday & before my mom texted back my phone said: imessage mom added mom to the conversation & mom added (husband's name) to the conversation. What's up with this??

Ssounds like a "group" text message where the second person was added to the conversation.

I presume you were having a conversation with messaging both simultaneously -
If so - Peizoandme would be correct and the app was notifying you about other individuals being added although the context is somewhat unusual
contact added contact to the conversation
