Stereo track with 2 IN faders

Fellows,

When I create a stereo track for record an acoustic guitar, for example, using 2 mics, Logic can create in the channel strip another fader in order to monitoring/recording each mic separately?

Perhaps in the Environment may I create more than 1 fader, in the signal path? Or, I suppose, only using 2 tracks, for each mic separately?
