I work as a designer and need to maximize the amount of memory as much as I can.
Some sites state 8GB is the max amount of memory allowed on this device.
Is this true?

8 GB (4x2) is mac for 15 " 2010 MacBook Pro. The13 inch can take 16 (2x8)

As Illaass has pointed out, a 15" 2010 MBP will only accept up to 8 GB RAM. (OWC and Crucial are the best sources for Mac compatible RAM)
However you can improve performance significantly by installing a SSD. My recommendations for a SSD are OWC and Crucial based on reputation and personal experience.

Thanks for the feedback. Would the SSD drive improve speed even if I currently have 206.25 GB free for storage?
Yes, installing an SSD will improve speed/performance regardless of the free storage you have on existing drive. You will really notice it on bootup
