If you were wearing the watch - (since your signature has "Watch" in it) then no - the phone need not be in your pocket

Otherwise yes - it is the only way the phone detects your movement

I was wearing the watch and it recorded the entire workout in the workout app. Why would the activity ring only read 7 min and the workout app read 1 hour.

Yesterday I was wearing the watch and I recorded an indoor walk 1 hour and the ring said 45 min not 1 hour.

    Hi

To credit progress towards your daily Exercise goal, the Activity app aims to identify activity that equals or exceeds the intensity of a brisk walk. This applies both during general daily wear and when recording workouts via the Workout app.

It is possible that your workouts did not meet this requirement for the full duration of each workout.

The definition of a brisk walk varies from person to person and depends upon your personal information. To check that your personal information is accurate - and to update it over time:

    - On your iPhone, in the Watch app, go to: My Watch (tab) > Health > Edit - tap and adjust items, then tap on Done.

During general daily wear and when your iPhone is not taken along on certain outdoor workouts, the Activity app relies on your arm motion (measured by the accelerometer) to track movement for the purpose of crediting progress towards the Exercise goal. For the best results, allow the arm on which you are wearing your watch to swing naturally as you move around and during walking and running workouts.

Calibrating your watch can improve the accuracy of various estimations (including Exercise credit) made by the Activity app and Workout app. More information and instructions for calibrating your watch are available via the link below.

If you would prefer to receive Exercise credit for the full duration of your workouts regardless of their intensity levels, track them via the Workout app using "Other" as the activity type.

This will credit one minute of Exercise for each full minute of the workout. Active calories will be estimated at a rate equivalent to a brisk walk or based on data recorded by the heart rate sensor, whichever is higher.
