The Guest Network feature of the Time Capsule will not work correctly if the Time Capsule is set up in Bridge Mode.

It should never have worked in Bridge Mode, according to Apple's product design.  I have no idea how you made that setup work previously.....since Apple says that you cannot do this.  Is it possible that you had the Time Capsule set up in a Router Mode of DHCP and NAT....and thought that it was in Bridge Mode?

From Apple's support document on the Guest Network feature.......

The DHCP and NAT option in AirPort Utility application > Network tab > Router Mode (default mode) must be selected on your primary base station

Additional info.......it is possible for the Time Capsule to be in Bridge Mode if it is set up to "extend" the network from another Apple router.

In other words, if your primary Apple router is setup as a router to handle DHCP and NAT......then, the Time Capsule could extend both the primary and guest networks providing that both the primary and extending AirPorts are using firmware 7.6.3 or higher.
