Q: Unable to restore iPod from old MacBook

I've got an early 2008 13" Macbook that has topped-out at OS 10.7.5. This means the latest version of iTunes I can run is 12.2.2.25.

Now I was trying to restore my daughters iPod touch which is backed up on my old iTunes but it won't talk to the iPod without the latest version of iTunes, which I can't run on OS 10.7.5.

I now have an unresponsive iPod and can't find a way to restore from the old iTunes to the iPod, or even get the iPod started again.

Any guidance appreciated as my research has not turned up any solutions.
