MacBook with USB-C? that can support ONE, using an HDMI port provided by an adapter or docking station. Use the internal display as the second display, it does not have to be mirrored.

Sounds like only ONE external monitor. I use two plus the screen on my MBP.
It does not look like the MacBook will work for me.

There are USB video adopters available and those should work with a USB-C adopter that has USB ports in addition to HDMI like this one

Note that typically there is lag I a monitor connected by USB
Extra displays generate heat, and you are likely to be doing work that may require a higher-rated MacBook, such as the MacBook Pro 15". that model supports more displays directly, and has a discrete graphics chip and more RAM memory on board. Better all around, but more money.

I will assume MBP is needed if I want two external monitors.

I am currently using Macbook 12 Retina with two external displays (+ one internal) with the help of Apple TV.
One display is connected via HDMI to Apple USB-C Multiport adapter, and one is connected to Apple TV 2nd gen.
Drawback: sometimes Airplay is switching off, and there is some delays on Apple TV monitor (like mouse pointer slightly slow). But overall it works.
Would be interested to see if the coming products will solve the issue in a better way.
No, sadly, because macOS doesn't support DisplayPort Multi-Stream Transport (otherwise you could, with something like the CalDigit USB-C Dock). You could drive a second monitor with a DisplayLink USB-to-DisplayPort adapter, but there are possible problems with that if you're running Sierra. With that said, I've used the DisplayLink solution in the recent past, and their more recent USB3 products are actually pretty responsive; their older ones were a little "laggy".
