Q: I can no longer edit playlist sorts
Okay, here's my gripe with iTunes 12.4, and hopefully someone who has figured it out can clue me in. Before this update, I could edit how my playlists were sorted. I could have them sorted by Playlist Order, which is basically the order they're added, or by Genre/Year/Artist/Album/etc. I can no longer do that. I'll even provide a helpful screenshot.
That is just one of many playlists you can see I have, and right above where you see "Edit Playlist," there used to be a drop-down menu where you could change how the playlist was sorted. I wanted to change my sort for this particular playlist to "Playlist Order" rather than "Year," but I can no longer do that. Also, when I go to Recently Added, it's now a grid of albums, rather than the straight listing down that had been a part of 12.3. Where is the button/switch/keyboard command that will allow me to go back to that, because if I wanted my Recently Added section to look like this, I'd have had it set up that way before today:

For Recently Added, that is a new view (it is not a playlist) under the Library heading. It seems to only have one option for viewing. However, your old Recently Added smart playlist is still there, under the Playlists heading in the sidebar, and it can be viewed in different ways, like any other playlist. Select a playlist in the sidebar, and from the menu bar, View -> View As -> [select desired view].
For your other question, select the playlist in the sidebar. From the menu bar, View -> Sort by -> Playlist Order.
