How do I transfer written documents from a CD to my mac mini for purpose of emailing them?

Jjust drag them from the CD to your desktop, or a folder on the desktop.

You can just insert CD in optical drive connected to the Mac and copy them to a folder. Then just attach them to an email message.
In reality you do not have to even copy them to the Mac. Just select them from the CD in Finder.
You are dealing with a baby boomer who is not up to speed on many things. When you say "insert CD into optical drive" are you referring to my DVD writer that I connect to my Mac mini via a USB port?
Yes, a DVD writer should also be able to read CDs as well as read DVDs
