I see that you are having difficulties syncing your iPod touch. You are not specific about exactly what steps you are following, so I would recommend taking a look at this article and making sure that you are not skipping anything.
Sync your iPhone, iPad, or iPod touch with iTunes on your computer using USB

The problem is that when I plug the cable into both the IPod and the laptop with the screen on ITunes (the latest version) the top left corner as shown on the help page. Without that I cannot get any further - although I have had it on once and managed to get some music on the IPod but it does not show now. Can you help with that aspect

I think at this point it might be a good idea to take a look at some of the other support options available, contact Apple Support. Given the circumstances you describe, one of the options that provides the opportunity to speak to someone might offer better help.
