Mac OS XIs it possible that someone is using screen sharing to "remote control" your Mac? I can't think of any other reason for iTunes "randomly" launching and playing songs. I can understand if iTunes started up automatically at login, but it would not just launch by itself. And it would not start playing songs.
If you want to mitigate this possibility, open System Preferences Sharing pane. If Screen Sharing has a checkmark next to it, uncheck it.

Check for other iTunes preference settings that might cause this.
