Probably this has been asked a million times, but I was wondering if there's a specific reason for read receipts not featuring in Apple products (or in third-party products for Mac)... Any clue?

Read receipts are subject to iMessage, which is a text/chat service through Apple. That means this will not work with regular text messages (the green bubbles). In order for you to see read receipts, the person you are messaging through iMessage must have this feature enabled from their end under Settings>Messages>Send Read Receipts.
Likewise, you must have this setting enabled on your Apple device in order for the other party to see when you have seen one of their messages.
