Q: I want to use my mac and sign my husbands phone into itunes. Even when I sign out of itunes and sign him in my playlists keep coming up
I want to sync my husbands iphone using my mac. I signed out of itunes and entered his information. When I plug in his phone my itunes song, albums etc still come up. How do I get his itunes to come up?

If you sync your husband's phone using your copy of iTunes, then that is exactly what will happen. "Signing in" applies to the iTunes Account (e.g. when you use the iTunes Store), but iTunes will still reference the iTunes Library that is in your own Home folder which means your playlists, songs etc.
If that isn't a problem, then leave things as they are. The alternative is for your husband to have his own iTunes music folder on your Mac with all HIS songs and playlists etc. To do this hold down the Option key when you launch iTunes and it will invite you to Open or Create a different Library. If you do this for your husband do be aware the Library will be empty until you / he adds content.
One question - how did your husband get his music onto his iPhone to start with? A different computer?
