Q: Reinstall OSX El Capitan but keep certain settings/mail

Hello everyone!

 

I would like to do a clean install of my Mid 2012 13-inch MacBook Pro with El Capitan, which I know how to do, but I have a slight problem.

I have an enormous amount of emails that are saved to my local drive (long story short, wanted to organise them in folders, did not realise it removed them from the server and only saved them locally) and my iPhone is synced to iTunes. Reinstalling El Capitan would obviously erase all application settings and data which would result in A) losing the emails and B) Losing content on my iPhone when syncing it to the MacBook after the reinstall.

 

So what I ask is: Does anyone know what to do to keep these two applications and their settings and move them back into El Capitan after the MacBook is reinstalled? I really don't want to lose the items on my iPhone because I have to move the synchronisation and my emails.
