When I follow the "Erase your drive and install OS X" instructions, will all my emails & email passwords be erased as well so they will not be available to the new owner?

Any copies on your computer will be. Doing it won't affect the email server.

Just to note secure erase is NOT an option for SSD's, even from Internet Recovery, so if u'r worried about personal info staying on the drive, I'd use Terminal always. particularly on SSD's
