better statement is tell her your phone was stolen and someone posted some horrifying stuff, but you got it back and managed to sock them in the nose. Hopefully they were sparred that terrible photoshopped image of you dressed like Ayn Rand that they posted.
You only get to say that once in your life so make it count.

iMessages can be Deleted from the Mac by Clicking to highlight and then using Backspace.
The mousing over a name in the Side Bar list and using the cross that shows up only dismisses the Chat from view.
If it is iMessages then this is still in the Chat.db items and will come back next time you iMessages her.
If she also Saves Chats on Close (See General section of the Preferences) then a copy is kept in the ~/Library/Containers/com.apple.iChat/Data/Library/Messages/Archive by dated folders (these are also deleted if you use the Delete Chat option in the File Menu of Messages).
The same should happen on the iPhone version.
An individual iMessages can be clicked and held before any action via the More option.
If the iPhone is backed up in iTunes there may be a copy.
Time Machine or other Backup method on the Mac may have a copy.
As I mentioned you can dismiss a chat on the Mac and it will come back as "history" next time the two of your have a conversation.
I am sure the iPhone version does not do this it is either Delete or one of the other More/Share options.

As Eric Says the answer is an emphatic No.
iMessages are deleted from the Servers as soon as the device Accepts them.
If they have multiple devices set to pick up iMessages they will all get a "copy"
Anything you do on one device does not effect any other device you have and it certainly does not "recall" the iMessage once sent.
Apple uses the word "Sync" but it basically only means "Display on all devices" you have to manually delete it on all devices you have "Syncing' your iMessages.
