I've written something in both Google Docs and TextEdit. Both have words in italics. When and copy and paste the text into iBooks Author, the text is no longer italicized. What do I do?

It does not. There is nothing in the article regarding preserving the format of pasted text.
In most apps it is possible to locate something similar to Paste and Retain Style under the Edit menu.
Try that in iBooks Author. Edit > Paste and Retain Style
