Q: Unable to view email for a single address
Ever since I've had this iPhone 5s and the one before it, I've had 2 email accounts (see first picture). When I'd check my email, I'd touch the account called gmail. Now that option has disappeared. I've done no upgrades, made no changes to any settings; just rebooted to see if that would help and it didn't. I can still see my gmail account by selecting "All Inboxes" but I'm afraid something might wrong.

From what I can tell from the information provided, your Gmail account isn’t showing under the Mailbox section in the Mail application. It does however show up under the Accounts category.
I have a few good steps to complete on this.
The first is to Force Close the Mail application. You can do so following this article: Force an app to close on your iPhone, iPad, or iPod touch - Apple Support
Once this is done, you will want to restart the iPhone: Restart your iPhone, iPad, or iPod touch - Apple Support
Open up the Mail app and see if it appears in the Mailbox section.
If not, the next step depends if your Gmail account is an IMAP. You would want to go to Settings > Mail, Contacts & Calendars. Select the Gmail account and remove it from the iPhone. Once this is completed, you will then add the account back into the iPhone to see if it starts showing up under the Mailbox section.
