Multi Line Header
How can I make a header for Numbers two lines? Alternatively is it possible to make a second header centered upon the first? I want two lines of title text centered on the top of the page.

If you mean the header printed at the top of a page, then select the menu item "File > Print...." then double click the header at the top-middle (or where ever) and type your text, then type the return key to go to the second line
If you mean a table header, then activate the table in question and open the table formatter, then select the number of header rows you want:

Although a second row of text can be added to a page header, I did not find it possible to center the text horizontally. As can be seen below, the Alignment buttons in the Text Inspector pane are greyed out, even though all of the Header text is selected.
The dark blue line above the highlighted Header text is the division between pages 1 and 2 of the document.
Table names ("Table 1" in the example) are centered automatically. With a small enough type size, the appear to wrap automatically when enough text is entered to make that necessary, but the wrap disappears when the entry is confirmed, and excess text simply disappears beyond the right margin. It does not appear possible to insert a return (or a line feed) in the Title box to force a second line.
Header Rows in the table will accept returns, as seen in the table above. Cells also have a property that allows excess text to flow beyond the edge of a cell away from the edge to which the text is aligned (providing the adjacent cell is empty). For text that is aligned to the center of a cell, this means text will remain centered in that cell, and will flow ove both left and right edges of the cell as needed.
The table in the example has a single Header row, and five columns (all the same width). Text in C1 is set to align to the center of the cell. Cells A1, B1, D1 and E1 are all empty. There is a return after the word 'indicators.'

Hi Lance,
Insert a table and delete all cells but one.
Type line 1 of your header.
Hold the option key and press enter to start a new line in that cell.
Type line 2 (or Menu > Insert > Page Number).
Format Panel > Text > Alignment > Centre.
Select the whole table (click on the "bullseye") and Cut.
Menu > File > Print.
In Print Setup, click in the Page Header and Paste.
I have deleted the default page number from the Page Footer.

I had tried that directly in the Header space but it either collapsed back to a single line or the extra line simply disappeared.
