Thanks for your post. Looks like you need to know when a message is sent successfully from your iPhone. Great question. If you look at the message thread, an undelivered message would have a red exclamation mark to the right of it and underneath it would say "Not Delivered". If the message does not have these indications there, this means that the message was sent successfully.
To answer your second question, if the recipient's Mac is not on at the moment, they will receive the text next time they are online. You can review the links below for some tips if you are having issues sending messages from your iPhone.
