I update my book cover in iBooks author and export an an .ibook. I delete my old copy on my iPad, but when I upload the new copy, it's like iBooks "remembers" the old cover and won't change it. I downloaded it on my sons iPad and it worked fine because his iPad has never had my book on it before. ??

A chance that perhaps works, try this:
Delete again the old copy, then sync the iPad with iTunes on the computer & make a backup.
Then try again to upload the new copy.
Exact same problem, I have try everything. Delete the ibook, restart the ipad, re-sync. Duplicate my original ibook, export with a different name. The cover get cached and won't update. I have a client presentation tomorrow (of course...) and I just can't make it work.
