Thanks for using the Apple Support Communities. I'm happy to help make your workflow a little more streamlined in Keynote and help get that text formatting working the way you want.
Once you've modified a text box to the way you'd like it to be set by default, follow this:
Format > Advanced > Set as Default Text Box Appearance
After that, any new text you create should start with that same formatting.

NO Format or advanced in that program.

Thanks for clarifying that, and sorry for the confusion!
Because Photos uses the system font editor, there isn't quite a way to save a setting as default. That being said, we can work around it by saving some settings to your favorites. That way, everything is quickly accessible for you going forward!
Here's how:
- Insert text onto a photo
- Right-click or cmd+click the text
- Choose Font > Show Fonts
- Make your text modifications
- Click the gear in the upper left corner of the Fonts window
- Add to Favorites
To use those modifications on other text, open the Fonts window again and choose "Favorites" from the left side. You'll see the settings you've saved there.
