So what if you cannot find your proof or purchase for the apple care? Wouldn't it still be in the system at least? Recently went through a move and finding a receipt from 5 months ago is looking to be impossible.

If your device is listed in your support profile and shows the Applecare+ as being in effect, then you are ok as the Applecare+ is automatically registered when you purchase it at an Apple store. If you purchased it elsewhere, you (or the store) would have needed to register it which, in turn, needs to be done within 90 days of date of purchase (of the device) if I recall correctly.
